Strawberry-Watermelon Slush

4 ice cubes
6 frozen strawberries
2 cups seedless watermelon cubes
¾ cup orange juice
1 tbsp lime juice

In a blender combine all ingredients and blend until smooth.

Makes 3 cups.

Chicken Hash with Fried Eggs

I made this recipe a couple of weeks ago. Turned our pretty good. I changed a few things from the original, but I will post the original here and then you can change what ever you like ;)

Ingredients:

  • 2 lb/900g mealy potatoes, peeled
  • 4 boneless skinless chicken breast portions
  • 2 tbsp vegetable oil
  • 1 onion, chopped finely
  • 1 garlic clove, chopped finely
  • salt and pepper
  • 2 tbsp fresh parsley, chopped
  • 4 eggs
    1. Cut the potatoes into 3/4 inch (2 cm) dice and cook in salted boiling water for 5 minutes, or until just tender. Drain well.
      Cut the chicken into 3/4 inch (2 cm) pieces. Heat half the oil in a large skillet. Add the onion and garlic and cook, stirring, for about 5 minutes, or until the onion has softened. Add the chicken, salt and pepper and cook, stirring, for a further 5 minutes, or until the onion and chicken have browned.
      Add the drained potatoes and cook, stirring occasionally, for 10 minutes, or until the potatoes have browned. Stir in the parsley.
      Meanwhile, in a separate skillet, heat the remaining oil. Break the eggs individually into the hot oil and cook until set.
      Serve the chicken hash with a cooked egg on top.

    This recipe is ranked ‘easy’. It serves 4. Preparation time is about 10 minutes. And cooking is about 30 minutes.
